Zen Garden Veggie Buddha Bowl
Ingredients:
1 cup cooked quinoa or brown rice
1 cup roasted sweet potatoes, diced
1 cup steamed broccoli florets
1/2 cup sliced avocado
1/2 cup shredded carrots
1/2 cup sliced cucumber
1/4 cup edamame beans
2 tablespoons tahini dressing (see recipe below)
Optional toppings: sesame seeds, chopped green onions.
Tahini Dressing Recipe: Ingredients: 2 tablespoons tahini 1 tablespoon lemon juice 1 tablespoon water 1 teaspoon maple syrup or honey 1/2 teaspoon minced garlic Salt and pepper to taste
Instructions: Start by assembling the base of your Buddha bowl with cooked quinoa or brown rice. Arrange the roasted sweet potatoes, steamed broccoli florets, sliced avocado, shredded carrots, sliced cucumber, and edamame beans in separate sections around the bowl. Drizzle the tahini dressing over the top of the bowl. Sprinkle with sesame seeds, chopped green onions for added flavor and texture. Serve immediately and enjoy this nourishing and balanced meal that will leave you feeling grounded and satisfied.
